Backgrounds of the soybean
The soybean comes from Asia. In China it has been used for thousands of years and is considered one of the 5 holy crops, next to rice, wheat, barley and millet. What makes it so popular is that it is packed with energy, protein, fat and fibre. Moreover, the soya bean is a very rich source of Calcium, Iron, Magnesium, Phosphorus and Zinc. In Asia, the soya bean is used to make tofu, tempeh, soya sauce and soya oil. In the Western world it was traditionally used mainly as fodder.
Should I cook soybeans?
Soybeans, like other legumes, contain the toxic substance lectin. If ingested raw soybeans can lead to abdominal discomfort, fever and diarrhea. Therefore, soybeans (and also our soybeans) should always be cooked before consumption.
