What is Guar gum?
Guar gum is extracted from Guar beans of the Guar plant. Guar gum (or Guaran) is three-quarters Guaran.
The origin of Guar gum
The Guar plant is grown in Pakistan, the U.S., Australia and Africa, but the largest producer is India. The beans are dried and ground into guar gum.
The applications of Guar gum
Guar gum is permitted as an additive. In the food industry guar gum is used as a thickener and stabilizer. It is often applied to improve the structure of ice cream, whereby it also ensures that the ice cream does not melt so quickly. It is also added to soft cheeses and cream cheese. In combination with Xantaangum guar gum is also an excellent thickener for non clear soups and sauces. Finally, guar gum is also a good source of fiber.
