Some background on Aduki beans
Aduki beans are related to the soya bean, which is why they are often called red soya beans. In Japan, the bean is also called the "king of beans" because of its colour in combination with its sweet taste. The bean is recognisable by its deep burgundy colour with a striking white stripe across its length axis. It is slightly smaller than a red kidney bean. The taste is a little sweeter than many other beans and pulses but still contains the nutty aftertaste.

Aduki beans are low in fat and high in fiber, vitamins and protein, but above all contain more minerals than other bean varieties. In particular, folic acid, phosphorus, magnesium and potassium are present in larger quantities. The Aduki bean comes into its own in, for example, stews or salads.
