Couscous made entirely from 100% whole-wheat Spelt flour
Customary Couscous is coarsely ground durum wheat (semolina). For this Spelt Couscous, 100% whole-wheat Spelt flour is used instead of durum wheat. The spelt flour is mixed with water and then formed into the small recognisable couscous balls by means of a rotating drum. The balls are boiled, dried and then air cooled.

Populite flour still contains the grain fibre. Important vitamins, fibers and minerals thus remain in the flour. Compared to wheat couscous, spelt couscous contains slightly more unsaturated fats and slightly more fibre. Difference in taste and smell
A more important difference between wheat and spelt couscous is sensory. Spelt couscous has a typical spelt smell and taste, which is different from that of wheat. Moreover, the Spelt Couscous grains elastic and not floury or sticky. They are easy to melt.
