Potato
The potato is a plant that stores energy in the form of starch in underground tubers. The starch the plant stores in stem tubers edible to humans, which are also called potatoes like the plant itself. The potato is native to South America.
History of the Potato
The potato was brought to Europe from South America by Spanish explorers. But as farmers knew that the stems and fruit of the plant were not edible, they thought that the tubers would be too and it was only used as pig feed. It was not until 1727 that the potato was first recognised as a food in its own right in Friesland.
Potato starch
Since the 18th century, the potato has become one of the staple foods in many European countries. Potatoes are an important source of carbohydrates and they also contain vitamin B6, vitamin C and fiber.
