Origin of gelatine
Gelatine is a protein product prepared by the hydrolysis of collagen. Hydrolysis is the splitting of a chemical compound under the absorption of water. This chemical compound is collagen. Collagen is a glue-forming protein found in connective tissues (skin, bones and cartilage) of humans and animals. For this reason this product is not suitable for vegetarians.
Bloom number
Gelatine is thus extracted from the connective tissue of mammals. After extraction, the gelatin is hydrolyzed with strong acids or bases and drawn in hot water. During this process, the soluble constituents dissolve. Finally, the gelatin is thickened, filtered and dried.
Use
This gelatin bloom comes from pig. The bloom dissolves in water and forms a gel when cooled. 210 is the number that represents the strength and brightness of the bloom. 210 is somewhere between gold (200) and platinum (230+). Titanium (120) bloom gelatin is the least transparent and is suitable for products where brightness does not matter. This 210 bloom is very suitable for making clear products, such as gummies.
