A little background about Sultana Raisins
A sultana is a dried grape. The drying is done to preserve the grape longer. Grapes grow in bunches on vines. In the southern hemisphere the grapes are ripe in March, in the northern hemisphere in August and September.
The Cultivation of Sultana Raisins
The bunches are cut from the bushes and left to dry in the sun. The moisture content drops, the grape shrinks and detaches from the stem. During drying, the grapes darker in colour.

Because a large part of the moisture from the grape is gone, sultanas are sweeter than grapes. Sultanas can be eaten as is, but are also used in many dishes. A well-known recipe with sultanas is boerenjongens.
