Parsnip, the white carrot
The parsnip originally comes from the Mediterranean region. Parsnip is also known as the white carrot. It can be eaten or prepared just like the common carrot, but tastes sweeter than the common carrot, especially when cooked.

Although the parsnip can be harvested in the summer it is usually considered a winter vegetable. Often one waits with lifting until there has been a cold period, because of this the root becomes sweeter. Harvesting is possible throughout the winter because the root in the ground does not freeze to death.

Parsnip can be eaten raw, boiled or stewed. Parsnip can also be fried or made into a stew. Fried parsnip is similar to crisps. Unfortunately, many of the nutrients in parsnips are lost when they are cooked. This is because they are mainly present on the outside of the root.
