Where to find the Lion's mane
The white to grey-white mushroom is found in Asia and North America, but also surprisingly close to home: in Europe. The mushroom can grow up to 25 centimetres in diameter. Lion's mane is very popular in Chinese cuisine, but is increasingly finding its way into European cuisine, thanks to its deliciously rich flavour.
