Origin
Fleur de Sel is also known as the flower of salt. This salt is only formed as a wafer-thin layer on the water on warm and windless days and is skimmed off by hand using a wooden shovel. This Fleur de Sel does not come from the Spanish, African or French coasts, where it is produced in large quantities, but from India.
Taste and use
Here it has traditionally been produced in small quantities along coastal India. At present, about 60 kg is extracted per day. This also makes it the rarest and most valuable Fleur de Sel on this earth.
Where do I purchase fleur de sel sea salts?
Some gourmets appreciate the taste which is determined by the content of calcium and magnesium sulfate. These contents are not present in rock salt. Due to the pyramid structure of the salt, it is also called pyramid salt.
